It is a white solid that has a slightly sulfurous odor, and is soluble in water. It has a density of 1.48 g/cm3. It is very stable, even under extreme conditions such as high temperature or exposure to light, and does not decompose upon heating to produce toxic gasses.

In food production, sodium hydrogen sulfate is often used as an alternative to sulfuric acid. It has the advantage of not forming a sour taste, and lowers the pH of foods without affecting flavor.
